Ok, I have to talk about msg, monosodium glutamate. It’s one of those controversial ingredients you’ll have to decide if you want to use in your cooking.

Msg has an umami savoriness flavor that enhances taste, making food delicious in many Asian dishes. It’s one of those seasonings that are simply a part of Asian dishes that most people who grew up eating find it hard to give up.

And, I will confess, over a decade ago, before realizing its effects on my body, I used it to flavor everything and, at times, probably went overboard with it. Msg and I don’t mix well. Bloating, headaches, and a desire to quench my thirst were the symptoms I experienced after eating it. But I am glad to have found healthier alternatives. I stopped using msg altogether twelve years ago.
