Oven-Roasted Salmon with Asparagus

Ingredients

  • 2 salmon fillets

  • 1 bunch asparagus, trimmed

  • 2 tablespoons lemon juice

  • 1 tablespoon olive oil

  • 2 cloves garlic, minced

  • Salt and pepper to taste

Steps

  1. Preheat the oven to 400°F (200°C).

  2. In a small bowl, mix lemon juice, olive oil, minced garlic, salt, and pepper.

  3. Place the salmon fillets and asparagus on a baking sheet lined with parchment paper.

  4. Drizzle the lemon and olive oil mixture over the salmon and asparagus.

  5. Bake for about 12-15 minutes or until the salmon is cooked through and the asparagus is tender. Serve with a side of quinoa or brown rice.
