Banana Cacao Ice Cream

I’m a big fan of using frozen bananas to create homemade ice cream because they mimic the thick, rich texture of ice cream made from dairy but with less effort.

Ingredients

  • 4 small ripe bananas, frozen and cut into 1-inch pieces

  • 1 tablespoon cacao

  • 1 tablespoon coconut cream

  • dark chocolate for topping

Steps

  1. Place half the frozen bananas into a blender and pulse until broken down. Use a plastic spatula to scrape and loosen the banana from the bottom of the blender.

  2. Add the rest of the bananas, and repeat step one.

  3. Add the cacao powder and coconut cream and blend at a high-speed setting until smooth.

  4. Transfer into a small bowl, top with coconut flakes, and serve.
