Homemade Sourdough Bread

Making sourdough bread from scratch requires a bit more time and effort, but the results are worth it!

Ingredients

  • 1 cup active sourdough starter

  • 3 1/2 cups bread flour- 1 1/2 teaspoons salt

  • 1 1/2 cups warm water

Steps

  1. In a large mixing bowl, combine the sourdough starter, bread flour, salt, and warm water. Stir with a wooden spoon until the ingredients come together to form a shaggy dough.

  2. Once the dough is well mixed, cover the bowl with a clean kitchen towel or plastic wrap and let it rest for about 30 minutes. This resting period is called autolyse and helps develop gluten in the dough.

  3. After the autolyse, it's time to start the process of folding and stretching the dough. Wet your hands with water to prevent sticking, then grab one side of the dough and stretch it up and over to the opposite side. Repeat this folding motion from all four sides of the dough, rotating the bowl as you go

  4. Cover the bowl again and let the dough rest for another 30 minutes. Repeat the folding process two more times, with 30 minutes of rest in between each fold. This helps strengthen the dough and develop its structure.

  5. After the final fold, let the dough rest for an additional 1-2 hours, or until it has visibly risen and feels airy and light.

  6. Preheat your oven to 450°F (230°C) and place a Dutch oven or a heavy oven-safe pot with a lid inside to preheat as well.

  7. Once the oven and pot are preheated, carefully remove the hot pot from the oven. Sprinkle some flour or cornmeal on the bottom of the pot to prevent sticking.

  8. Gently transfer the dough from the bowl into the hot pot. Be careful as the pot and oven are very hot. Score the top of the dough with a sharp knife or razor to allow for expansion during baking.

  9. Cover the pot with the lid and place it back into the preheated oven. Bake for 30 minutes with the lid on.

  10. After 30 minutes, remove the lid and continue baking for an additional 15-20 minutes, or until the bread is golden brown and has a crispy crust

  11. Once baked, carefully remove the bread from the pot and let it cool on a wire rack before slicing.
