Pea Shoots
Pea shoots taste slightly sweet and are crunchy in texture. I often like to mix them with other microgreens of kale and arugula for a powerful nutrient-packed salad. So if you are bored of regular salads, try the microgreen version, which in my opinion is more flavorful.
Highlighted Benefits
Antioxidant, anticancer, anti-inflammatory
Peashoots may be sprouted from seeds, but don’t underestimate their powerful health benefits. They are rich in vitamin C; you only need to consume 100 grams of pea shoots to get 76% of the daily recommended allowance. As you may already know, vitamin C is important in forming collagen, muscles, cartilage, and blood vessels. Peashoots’ other nutrients include vitamin K, vitamin A, fiber, and protein.
