Peanut Butter Protein Cookies

When I decided to get fit, I restricted myself from snacking on cookies, cakes, and pastries⏤all the treats I enjoyed. But living a healthy lifestyle is not about giving up on the things you love but learning how to live with them. So I began experimenting with baking using alternative ingredients and, voila, scrumptious protein cookies created with peanut butter. Alternatively, you can substitute peanut butter with other nut butter if you prefer.

Ingredients

  • 1 cup (250g) peanut butter

  • 1/3 to 2/3 cups (120g) of coconut sugar

  • 1 egg

  • 1/2 cup (55g) vanilla protein powder

Steps

  1. Preheat the oven to 350°F (180°C). Line a baking sheet with baking paper.

  2. Place all the ingredients into a large bowl and mix until well combined.

  3.  Form the mixture into 12 balls. Place them on the lined baking sheet. Press down each ball to form a cookie.

  4. Place the tray into the hot oven and bake the cookies for 12-14 minutes or until the edges of the cookies start to brown.

  5. Remove from the oven, place the baking sheet onto a wire rack, and let the cookies cool completely on the baking sheet.

  6. Store the cookies in an airtight container for up to 14 days.
