Skin Beauty Salad

This salad is rich in ingredients that make your skin healthy and glowing such as beta-carotene, zinc, selenium, and vitamins A, and C.

Ingredients

  • 12 medium shrimp, cooked
  • 1 medium cucumber, sliced
  • 2 baby romaine lettuce, roughly chopped

  • 1 cup spinach

  • 1 red pepper, sliced

  • 1/4 cup radishes, diced

  • 1/4 red onion, finely diced

  • 1 tablespoon pumpkin seeds

  • 1 carrot, diced

  • 1/2 avocado

  • 1 tablespoon apple cider vinegar

  • juice of 1 lime

  • 1/2 teaspoon honey

  • 1/2 teaspoon dijon mustard

  • a pinch of sea salt

Steps

  1. For the dressing, mash the avocado with a fork. Add the lime juice, apple cider vinegar, honey, dijon mustard, and a pinch of salt and mix until smooth.

  2. Mix the cucumber, spinach, lettuce, red peppers, radish slices, carrots, and onions in a large bowl.

  3. Add the dressing and mix through. Garnish with pumpkin seeds.
