Skin Beauty Salad
This salad is rich in ingredients that make your skin healthy and glowing such as beta-carotene, zinc, selenium, and vitamins A, and C.
Ingredients
12 medium shrimp, cooked
1 medium cucumber, sliced
2 baby romaine lettuce, roughly chopped
1 cup spinach
1 red pepper, sliced
1/4 cup radishes, diced
1/4 red onion, finely diced
1 tablespoon pumpkin seeds
1 carrot, diced
1/2 avocado
1 tablespoon apple cider vinegar
juice of 1 lime
1/2 teaspoon honey
1/2 teaspoon dijon mustard
a pinch of sea salt
Steps
For the dressing, mash the avocado with a fork. Add the lime juice, apple cider vinegar, honey, dijon mustard, and a pinch of salt and mix until smooth.
Mix the cucumber, spinach, lettuce, red peppers, radish slices, carrots, and onions in a large bowl.
Add the dressing and mix through. Garnish with pumpkin seeds.
