Vie’s Almond Coconut Dark Chocolate Chip Cookies

I love sweet treats, and as a food enthusiast who is a health coach, I learned moderation is key to satisfying your cravings. And you shouldn’t have to give up eating the things you love but rather figure out a way to create a healthier version. This recipe is one of my earliest healthy recipe creations from over a decade ago when cutting out white sugar was my focus to achieve my health and fitness goals.

If making 12 cookies: Kcal: 225, Carbs: 15g, Protein: 4g, Fat: 18g

If making 16 cookies: Kcal: 169. Carbs: 11g, Protein: 3g, Fat: 14g

Ingredients

makes 12 - 16

  • 1 ½ cups almond meal

  • 1 cup unsweetened coconut flakes

  • 1/3 cup maple syrup or honey (adjust to taste)

  • 1/4 cup melted coconut oil

  • 1/2 cup dark chocolate chips

  • 1/4 teaspoon sea salt, optional (or to taste)

 

Steps

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

  2. In a mixing bowl, combine the almond meal, unsweetened coconut flakes, and sea salt (optional).

  3. In a separate bowl, whisk together the maple syrup or honey and melted coconut oil until well combined.

  4. Pour the wet mixture into the dry ingredients and mix until a sticky dough forms.

  5. Fold in the dark chocolate chips until evenly distributed throughout the dough.

  6. Using a tablespoon or cookie scoop, drop rounded portions of dough onto the prepared baking sheet, spacing them apart.

  7. Gently flatten each cookie to your desired thickness with the back of a spoon or your fingers.

  8. Bake for 12-15 minutes or until the edges are golden brown.

  9. Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Feel free to adjust the sweetness by adding more or less maple syrup or honey according to your taste preferences. You can also customize the recipe by adding chopped nuts, dried fruits, or other mix-ins of your choice.

Note: Almond meal tends to make cookies more delicate, so handle them with care when transferring to the cooling rack.
