Banana Spirulina Ginger Ice Cream

I know spirulina in ice cream sounds strange, but what better way to benefit from this superfood than in ice cream? I added ginger to offset the taste of spirulina, which may get some getting use to for people who haven’t tasted it before.

Ingredients

  • 4 small ripe bananas, frozen and cut into 1-inch pieces

  • 1 teaspoon spirulina

  • 1 tablespoon coconut cream

  • 1 teaspoon fresh ginger, minced

  • unsweetened coconut flakes for topping

Steps

  1. Place half the frozen bananas into a blender and pulse until broken down. Use a plastic spatula to scrape and loosen the banana from the bottom of the blender.

  2. Add the rest of the bananas, and repeat step one.

  3. Add spirulina, ginger, and coconut cream and blend at a high-speed setting until smooth.

  4. Transfer into a small bowl, top with coconut flakes, and serve.
