Hair-Healthy Salmon and Quinoa Salad

Ingredients

  • 2 salmon fillets

  • 1 cup cooked quinoa

  • 2 cups mixed salad greens

  • 1 cucumber, sliced

  • 1 avocado, sliced

  • 1/4 cup cherry tomatoes, halved

  • 1/4 cup red onion, thinly sliced

  • 2 tablespoons chopped fresh parsley

  • Juice of 1 lemon

  • Salt and pepper to taste

Avocado Dressing:

    • 1 ripe avocado

    • 2 tablespoons Greek yogurt

    • 1 tablespoon extra-virgin olive oil

    • 1 tablespoon fresh lemon juice

    • 1 clove garlic, minced

    • Salt and pepper to taste

Steps

  1. Preheat the oven to 400°F (200°C). Season the salmon fillets with salt, pepper, and lemon juice. Place them on a baking sheet lined with parchment paper and bake for about 12-15 minutes or until cooked. Remove from the oven and let them cool slightly.

  2. Combine the cooked quinoa, mixed salad greens, cucumber slices, avocado slices, cherry tomatoes, red onion, and chopped parsley in a large bowl.

  3. In a separate small bowl, mash the ripe avocado until smooth. Add Greek yogurt, olive oil, lemon juice, minced garlic, salt, and pepper. Mix well to create the avocado dressing.

  4. Flake the cooked salmon into bite-sized pieces and add it to the salad mixture.

  5. Drizzle the avocado dressing over the salad and gently toss to coat all the ingredients.
