Lentil and Vegetable Stir-Fry
Ingredients
1 cup cooked lentils
1 tablespoon sesame oil
1 red bell pepper, sliced
1 cup broccoli florets
1 carrot, sliced
2 cloves garlic, minced
2 tablespoons low-sodium soy sauce
1 tablespoon rice vinegar
1 teaspoon honey or maple syrup
1/2 teaspoon grated ginger
Steps
Heat sesame oil in a large skillet or wok over medium heat.
Add garlic, red bell pepper, broccoli, and carrot. Stir-fry for a few minutes until the vegetables are tender-crisp.
In a small bowl, whisk together low-sodium soy sauce, rice vinegar, honey or maple syrup, and grated ginger to make the sauce.
Add cooked lentils and the sauce to the skillet. Stir-fry for an additional 2-3 minutes.
Serve hot as a main dish or as a side with lean protein.
