Lentil and Vegetable Stir-Fry

Ingredients

  • 1 cup cooked lentils

  • 1 tablespoon sesame oil

  • 1 red bell pepper, sliced

  • 1 cup broccoli florets

  • 1 carrot, sliced

  • 2 cloves garlic, minced

  • 2 tablespoons low-sodium soy sauce

  • 1 tablespoon rice vinegar

  • 1 teaspoon honey or maple syrup

  • 1/2 teaspoon grated ginger

Steps

  1. Heat sesame oil in a large skillet or wok over medium heat.

  2. Add garlic, red bell pepper, broccoli, and carrot. Stir-fry for a few minutes until the vegetables are tender-crisp.

  3. In a small bowl, whisk together low-sodium soy sauce, rice vinegar, honey or maple syrup, and grated ginger to make the sauce.

  4. Add cooked lentils and the sauce to the skillet. Stir-fry for an additional 2-3 minutes.

  5. Serve hot as a main dish or as a side with lean protein.
