Ingredients

  • 1 cup cooked quinoa

  • 1 cucumber, diced

  • 1 cup cherry tomatoes, halved

  • 1/4 cup red onion, thinly sliced

  • 1/4 cup Kalamata olives, pitted and halved

  • 2 tablespoons crumbled feta cheese

  • 2 tablespoons extra virgin olive oil

  • 1 tablespoon lemon juice

  • 1 teaspoon dried oregano

  • Salt and pepper to taste

Steps

  1. In a large bowl, combine cooked quinoa, diced cucumber, cherry tomatoes, red onion, and Kalamata olives.

  2. In a small bowl, whisk together extra virgin olive oil, lemon juice, dried oregano, salt, and pepper to make the dressing.

  3. Pour the dressing over the quinoa mixture and toss to combine.

  4. Sprinkle crumbled feta cheese on top. Serve chilled as a refreshing and nutritious salad.
