Greek Quinoa Salad
Ingredients
1 cup cooked quinoa
1 cucumber, diced
1 cup cherry tomatoes, halved
1/4 cup red onion, thinly sliced
1/4 cup Kalamata olives, pitted and halved
2 tablespoons crumbled feta cheese
2 tablespoons extra virgin olive oil
1 tablespoon lemon juice
1 teaspoon dried oregano
Salt and pepper to taste
Steps
In a large bowl, combine cooked quinoa, diced cucumber, cherry tomatoes, red onion, and Kalamata olives.
In a small bowl, whisk together extra virgin olive oil, lemon juice, dried oregano, salt, and pepper to make the dressing.
Pour the dressing over the quinoa mixture and toss to combine.
