Mediterranean Quinoa Stuffed Bell Peppers

Ingredients

  • 4 bell peppers (any color)

  • 1 cup cooked quinoa

  • 1 can (15 oz) chickpeas, rinsed and drained

  • 1 cup diced tomatoes

  • 1/2 cup diced cucumber

  • 1/4 cup chopped Kalamata olives

  • 1/4 cup crumbled feta cheese

  • 2 tablespoons chopped fresh parsley

  • 2 tablespoons lemon juice

  • 2 tablespoons extra virgin olive oil

  • 1 teaspoon dried oregano

  • Salt and pepper to taste

Steps

  1. Preheat the oven to 375°F (190°C).

  2. Cut off the tops of the bell peppers and remove the seeds and membranes.

  3. In a large bowl, combine cooked quinoa, chickpeas, diced tomatoes, diced cucumber, Kalamata olives, crumbled feta cheese, chopped parsley, lemon juice, extra virgin olive oil, dried oregano, salt, and pepper. Mix well.

  4. Stuff the bell peppers with the quinoa mixture and place them in a baking dish.

  5. Cover the dish with foil and bake for about 25-30 minutes, or until the bell peppers are tender.

  6. Remove the foil and bake for an additional 5 minutes to lightly brown the tops.

  7. Serve the stuffed bell peppers warm as a satisfying and flavorful meal.
