Peanut Butter Granola Bars

Ingredients

serves 12

  • ⅓ cup (100 grams) honey 

  • ¼ cup (65 grams) peanut butter 

  • ¼ cup (50 grams) coconut oil 

  • 1 teaspoon vanilla extract

  • pinch salt

  • ½ cup (70 grams) almonds, chopped

  • 2 cups (185 grams) rolled oats 

  • ⅜ cup (65 grams) dark chocolate, chopped

 

Steps

  1. Prepare an 8x8 inch baking tray by lining it with baking paper.

  2. Mix the honey, peanut butter, and coconut oil in a medium saucepan. Heat over low heat until everything is melted. Bring to a simmer and cook for 1 minute. Remove from the heat and allow to cool for 10 minutes.

  3. Once cooled slightly, stir in the almonds, rolled oats, and most chocolate (leave some to top the bars).

  4. Transfer the mixture to the lined tray and firmly press it down.

  5. Top with the remaining chocolate, then refrigerate for at least 2 hours.

  6. Once chilled, cut into 12 bars and store in an airtight container in the fridge for up to 2 weeks.
