Quinoa and Vegetable Stir-Fry

Ingredients

  • 1 cup cooked quinoa

  • 1 tablespoon olive oil

  • 1 small onion, thinly sliced

  • 2 cloves garlic, minced

  • 1 cup mixed vegetables (such as bell peppers, broccoli, and carrots)

  • 2 tablespoons low-sodium soy sauce

  • 1 teaspoon sesame oil

Steps

  1. Heat olive oil in a large skillet or wok over medium heat.

  2. Add onion and garlic, and sauté until fragrant and slightly softened.

  3. Add mixed vegetables and stir-fry for a few minutes until tender-crisp.

  4. Stir in cooked quinoa, soy sauce, and sesame oil. Cook for an additional 2-3 minutes.

  5. Serve hot as a main dish or as a side with lean protein.
