Quinoa and Vegetable Stir-Fry
Ingredients
1 cup cooked quinoa
1 tablespoon olive oil
1 small onion, thinly sliced
2 cloves garlic, minced
1 cup mixed vegetables (such as bell peppers, broccoli, and carrots)
2 tablespoons low-sodium soy sauce
1 teaspoon sesame oil
Steps
Heat olive oil in a large skillet or wok over medium heat.
Add onion and garlic, and sauté until fragrant and slightly softened.
Add mixed vegetables and stir-fry for a few minutes until tender-crisp.
Stir in cooked quinoa, soy sauce, and sesame oil. Cook for an additional 2-3 minutes.
