Spinach and Mushroom Stuffed Chicken Breast

Ingredients

  • 2 boneless, skinless chicken breasts

  • 1 cup fresh spinach leaves

  • 1/2 cup sliced mushrooms

  • 2 cloves garlic, minced

  • 2 tablespoons grated Parmesan cheese

  • 1 tablespoon olive oil

  • Salt and pepper to taste

Steps

  1. Preheat the oven to 375°F (190°C).

  2. In a skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant.

  3. Add spinach and mushrooms to the skillet and cook until wilted.

  4. Slice a pocket into each chicken breast and stuff with the spinach and mushroom mixture.

  5. Place the stuffed chicken breasts on a baking sheet lined with parchment paper.

  6. Sprinkle-grated Parmesan cheese, salt, and pepper over the chicken.

  7. Bake for about 25-30 minutes or until the chicken is cooked through. Serve with a side of steamed vegetables.
