Spinach and Mushroom Stuffed Chicken Breast
Ingredients
2 boneless, skinless chicken breasts
1 cup fresh spinach leaves
1/2 cup sliced mushrooms
2 cloves garlic, minced
2 tablespoons grated Parmesan cheese
1 tablespoon olive oil
Salt and pepper to taste
Steps
Preheat the oven to 375°F (190°C).
In a skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant.
Add spinach and mushrooms to the skillet and cook until wilted.
Slice a pocket into each chicken breast and stuff with the spinach and mushroom mixture.
Place the stuffed chicken breasts on a baking sheet lined with parchment paper.
Sprinkle-grated Parmesan cheese, salt, and pepper over the chicken.
Bake for about 25-30 minutes or until the chicken is cooked through. Serve with a side of steamed vegetables.
