Buckwheat

Buckwheat is gluten-free. And despite its name, buckwheat is not a wheat grain but a seed, making it the perfect alternative ingredient to accompany your meal. One of my all-time favorite way to use buckwheat is in a tabouli recipe, yum! And I’m sure you’ve heard of Japanese Soba noodles, which I am crazy about. They are made from buckwheat, water, and salt; very simple ingredients but delicious.

Buckwheat is friendly to your waistline and may help reduce blood pressure and boost heart, skin, and hair health.

Buckwheat contains copper, choline, manganese, magnesium, phosphorus, and iron. They are also rich in antioxidant plant compounds quercetin, rutin, vitexin, and D-chiro-inositol, a compound that may help reduce blood sugar levels.

Another benefit of including buckwheat is its benefits for digestive health because of its rich fiber and niacin content. Niacin is a B-vitamin that is essential for converting fats, and carbohydrates into energy for the body to use.
