Butternut Squash

I love roasting butternut squash to help satisfy my cravings for sweets. They get caramelized when you roast them bringing out that sugary sweetness and giving them a crunchy, chewy texture, almost like a slightly burnt chocolate chip cookie.

Antioxidant, anti-inflammatory

Butternut squash has that beautiful bright orange color due to a compound called carotenoids, a fat-soluble antioxidant. As with any food that contains antioxidants, they help fight against aging and help protect skin cells against damage.

They also contain important minerals like potassium, magnesium, vitamin C, fiber, and B vitamins.
