Golden Glow Turmeric, Pumpkin & Squash Soup

This soup combines the anti-inflammatory properties of turmeric with the vitamins and antioxidants found in pumpkin or squash. Ingredients

  • 2 cups pumpkin or squash, peeled and cubed

  • 1 onion, chopped- 2 cloves garlic, minced

  • 1-inch piece of fresh ginger, grated

  • 1 teaspoon turmeric powder

  • 1/2 teaspoon ground cumin

  • 1/2 teaspoon ground coriander

  • 4 cups vegetable broth

  • 1 cup coconut milk

  • 1 tablespoon olive oil

  • Salt and pepper to taste

  • Pumpkin seeds fresh cilantro (optional for topping)

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion, minced garlic, and grated ginger. Sauté until the onion becomes translucent and fragrant.

  2. Add the cubed pumpkin or squash to the pot, along with the turmeric powder, ground cumin, and ground coriander. Stir well to coat the vegetables with the spices.

  3. Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat to low, cover the pot, and let it simmer for about 20-25 minutes or until the pumpkin/squash is tender.

  4. Remove the pot from the heat and let the soup cool slightly. Puree the soup until smooth and creamy using an immersion or regular blender.

  5. Return the soup to the pot and stir in the coconut milk—season with salt and pepper to taste.

  6. Reheat the soup over low heat until warmed through.

  7. If desired, ladle the soup into bowls and garnish with pumpkin seeds and fresh cilantro.
