Grilled Chicken and Vegetable Skewers

Ingredients

  • 2 boneless, skinless chicken breasts, cut into chunks

  • 1 red bell pepper, cut into chunks

  • 1 zucchini, sliced

  • 1 red onion, cut into chunks

  • 2 tablespoons olive oil

  • 2 cloves garlic, minced

  • 1 teaspoon dried Italian seasoning

  • Salt and pepper to taste

Steps

  1. Preheat the grill to medium-high heat.

  2. In a bowl, combine olive oil, minced garlic, Italian seasoning, salt, and pepper.

  3. Thread the chicken, bell pepper, zucchini, and red onion onto skewers.

  4. Brush the skewers with the olive oil mixture.

  5. Grill the skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through and the vegetables are tender. Serve with a side of whole grain couscous or quinoa.
