Lentil and Vegetable Soup

Ingredients

  • 1 cup dried lentils, rinsed and drained

  • 1 tablespoon olive oil

  • 1 onion, diced

  • 2 carrots, diced

  • 2 celery stalks, diced

  • 2 cloves garlic, minced

  • 4 cups low-sodium vegetable broth

  • 1 teaspoon dried thyme

  • 1 bay leaf

  • Salt and pepper to taste

Steps

  1. Heat olive oil in a large pot over medium heat.

  2. Add onion, carrots, celery, and garlic. Sauté until vegetables are slightly softened.

  3. Add lentils, vegetable broth, dried thyme, bay leaf, salt, and pepper to the pot. Bring to a boil.

  4. Reduce heat to low, cover, and simmer for about 25-30 minutes or until lentils are tender.

  5. Remove the bay leaf before serving. Enjoy the soup with a side of whole-grain bread.
