Spinach and Mushroom Omelette

Ingredients

  • 2 eggs

  • 1 cup fresh spinach leaves

  • 1/4 cup sliced mushrooms

  • 1/4 cup shredded cheese (optional)

  • Salt and pepper to taste

  • 1 teaspoon olive oil

Steps

  1. In a bowl, whisk the eggs with salt and pepper.

  2. Heat olive oil in a non-stick pan over medium heat.

  3. Add the mushrooms and sauté until they soften.

  4. Add the spinach leaves and cook until wilted.

  5. Pour the whisked eggs into the pan and cook until set.

  6. Sprinkle shredded cheese on top (if desired) and fold the omelet in half.

  7. Cook for another minute until the cheese melts.

  8. Serve hot.
